SWEET AND CRUNCHY BROCCOLI SALAD

This is really yummy.
I don't measure much so these will be estimates but really, this one is hard to mess up.

About 3 cups of chopped broccoli - raw
1 can of mandarin oranges - drained
1 small package of slivered almonds - or pecans (or both!!)
about 1/2 cup (or more) vanilla yogurt (I use the lowfat kind) - You could also use mayonnaise mixed with some powdered or regular sugar, but the yogurt is so much better and healthier, I think!
a big handful (or 2!) of raisins - the golden raisins are great in this but the regular ones work, too
some chopped red onion (I like a lot!!)

Put it in a bowl and mix it all up! Refrigerate it for a while or serve as soon as you make it!
This is one of our new faves - especially good for summertime!

Dutch Spinach Salad

3-4 Slices of bacon
1 Egg
3T Sugar
1T Vinegar
1/2 cup onion- diced or thinly sliced
4 cups Torn spinach leaves
2-3 Hard Boiled Eggs
Salt and Pepper

In a small frying pan cook bacon until crisp (do not drain grease)
In a 1 cup measuring cup put 1 egg, 1T Sugar, 6T Vinegar, and enough water to fill it to 3/4 cup.
Pour this mixture over bacon grease.
Cook stirring constantly until it thickens.
Pour hot dressing over greens and onion, garnish with boiled egg slices and serve immediately.

TOMATO SALAD

5 Medium tomatoes diced (Roma's work best) if using Romas use at least 10)
1T Sugar
1tsp. Salt
1tsp Dry Basil - I use fresh if I have it and I use a lot maybe 1/2 cup
1/4 tsp Black Pepper
1/4 tsp Thyme - I sometimes use italian seasoning instead
6T Vinegar
1/2 cup of oil (olive or vegetable)
1T Worcestershire Sauce
1 Large onion diced

Mix all ingredients and chill. I take this to a lot of cookouts and get togethers and it is always a huge hit. I serve it with tortilla chips and most people will eat it like Salsa.
